OHIO Turkey Bruschetta Burger4 servings

1/4 cup chopped sweet onion
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Kosher salt and freshly cracked pepper to taste
3 medium Ohio tomatoes, chopped
1 tablespoon roasted chopped garlic
2 tablespoons fresh basil leaves, cut in strips
3 ounces part skim mozzarella, chopped
2 medium Ohio tomatoes, sliced into 8 thin slices
4 cups of salad greens, loosely packed
1- pound lean ground turkey
1 small zucchini, grated (about 1 cup), excess moisture removed
1/4 cup seasoned bread crumbs
2 tablespoons grated fresh sweet onion
Salt and pepper to taste
Topping: Combine the onion, olive oil, balsamic, and seasonings in a large bowl. Add the tomatoes, garlic and basil; mix well and set aside. Add chopped cheese right before serving.
Burgers: In a large bowl, combine the zucchini (excess moisture removed with a paper towel), ground turkey, breadcrumbs, garlic, onion, salt and pepper. Form into 4 flat patties. Using a large grill pan or skillet, spray with vegetable coating. Add burgers to hot pan and reduce heat to medium-low. Cook until browned, about 4 minutes, then flip and cook an additional 4 minutes.
To serve: Arrange 2 slices of tomato on each plate, then place 1 cup of salad greens on top, then place the burger and finish with the fresh bruschetta. Serve immediately.
