Kool-Aid Pulled Pork4-6

1 - Pork shoulder (Boston butt) 7-9lbs
2 - Packets of your favorite Kool-Aid flavor
1/3 cup of kosher salt
2 cups brown sugar divided
Score the fat side of the pork by cutting 1 inch deep lines around 2 inches apart. repeat in the opposite direction leaving you with 2 inch squares. Using one Kool-Aid packet, spread it evenly over the top and rub it into the meat thoroughly. flip the pork over and rub the remaining Kool-Aid packet on the bottom side.
Combine 1 cup of brown sugar and all of the salt, rub evenly around the entire pork shoulder. Pack the remaining brown sugar evenly on the scored side. Wrap tightly in plastic wrap and place in refrigerator for four hours up to overnight. Place in roaster with a lid in the oven at 375 degrees for one hour, then turn the temperature down to 275 degrees for three to six more hours until it falls apart easily.
