Grape Crostini
Ingredients:
- Grapes, green 1 pound
- Shallots, minced 1
- EVOO 1?8 cup
- White Balsamic Vinegar 2 Tbsp
- Sugar, granulated 1 Tbsp
- Thyme, chopped 1 tsp
- Salt To taste
- Pepper To taste
- Cloverton cheese 0.5 pounds
- Baguette 1
- EVOO 1?8 cup
- Salt to taste
- Pepper to taste
Recipe:
- Slice baguette with a serrated knife on the bias. Lay out baguette slices on a sheet plan and drizzle with EVOO. Sprinkle with salt and pepper to taste. Toast at 325F for 4-6 minutes until slightly golden. Let rest.
- In a bowl, mix together grapes, shallots, white balsamic, sugar, thyme, salt and pepper. Roast mixture at 425 for 5-7 minutes, or until the grapes start to burst open. Let rest.
- To build the crostini- Spread the cloverton cheese on the baguette and spoon a portion of the grape compote on top. Serve and enjoy!
