Eat Up! Columbus Grape Crostini (recipe)

Grape Crostini


  • Grapes, green 1 pound
  • Shallots, minced 1
  • EVOO 1?8 cup
  • White Balsamic Vinegar 2 Tbsp
  • Sugar, granulated 1 Tbsp
  • Thyme, chopped 1 tsp
  • Salt To taste
  • Pepper To taste
  • Cloverton cheese 0.5 pounds
  • Baguette 1
  • EVOO 1?8 cup
  • Salt to taste
  • Pepper to taste

  1. Slice baguette with a serrated knife on the bias. Lay out baguette slices on a sheet plan and drizzle with EVOO. Sprinkle with salt and pepper to taste. Toast at 325F for 4-6 minutes until slightly golden. Let rest.
  2. In a bowl, mix together grapes, shallots, white balsamic, sugar, thyme, salt and pepper. Roast mixture at 425 for 5-7 minutes, or until the grapes start to burst open. Let rest.
  3. To build the crostini- Spread the cloverton cheese on the baguette and spoon a portion of the grape compote on top. Serve and enjoy!
